Historical Tale:
Classic Braised Pork Belly(Dongpo Pork) owes its name to Su Dongpo, the legendary Song Dynasty scholar. Exiled to Huangzhou in 1080, Su refined the art of braising pork with yellow wine and soy sauce, proclaiming, “Slow fire, less water, and when the heat is right, it becomes divine.” His ode to pork celebrated its humble yet exquisite charm, and the dish later became a Zhejiang culinary legend!
