👨🏻‍🍳 Recommended Cooking Methods 👨🏻‍🍳
✅ Korean-style / Charcoal grilling: Bring to room temperature, simply sprinkle sea salt + black pepper, quickly sear both sides over medium-high heat until surface is lightly charred, fat is rendered, and bone edges are golden, then remove immediately.
✅ Air-fry / Oven roast: Preheat air fryer or oven to 180–200°C, brush with a little oil or BBQ sauce; air-fry for 15–25 minutes (flip halfway), or oven-roast for 20–30 minutes until crispy outside, tender inside, and meat separates from bone.
✅ Slow-cooked stew / Braising: Blanch first to remove blood, add ginger slices, star anise, soy sauce, rock sugar, etc.; simmer over medium heat for 1.5–2 hours until meat is fall-off-the-bone tender and broth is rich; perfect for warming up in winter.
✅ Sous vide + searing: Cook at 65–70°C for 2–3 hours to ensure even tenderness, then finish with high-heat searing or air-frying to add aromatic charred edges.
